This course will explore the important role of cooking and eating in
different cultures. We will focus on the current transformation of the
world food system, through processes of globalization, the growth of new
technologies, and the spread of fast food. Most of the examples and
reading will be concerned with developments in East Asia, particularly
China, where food culture is undergoing enormous change. We will also
conduct field projects here in town, including one looking at the way
foreign cooks have adapted their native cuisine for Hoosier tastes. Expect
to do some cooking and eating as well!
