The consumption of maize and maize-based products is a global
phenomenon. How was maize transformed from a simple grass to one of
the staple crops of the Americas and later, to a global commodity? In
this class we will explore the transformation, proliferation and
commodification of this most a-maize-ing grain. This course will
utilize a four-field, anthropological perspective to the study of
maize. The course is meant to provide a broad-spectrum overview to the
history and impacts of maize; we will cover multiple time periods,
geographic locations, and topics. A background in anthropology is not
required
