Food Chemistry (3 cr.) P: HPER-N 120; CHEM-C 118/S 118 or
equivalent. R: A course in organic chemistry. Advanced study of the
chemical and physical properties of food as related to use, quality,
and preparation. New food products, composition, and food
technologies. Two-and-a-half hours of lecture weekly.
