The Smith Kitchen or Smitchen may be the best residence hall kitchen of its size in the United States. (OK, we really don't have any data to back up that claim.) Although tiny at 70 sq. ft., the Smitchen includes wrap around stainless counters, a triple sink, a high-quality convection range, an under-counter refrigerator, ventilation, and a certain amount of cookware. The Collins Sustainable Food Committee prepares its meals there, and the Smitchen is open to all Collinsites by key checkout following a brief training session with our kitchen coordinator. The Smitchen renovation took place during summer 2013 thanks to financial contributions made from RPS, the College of Arts & Sciences, Collins residents, and the director. The poster you see in the photo was signed for us by Alice Waters (chef, restaurateur, activist, author, and owner of Chez Panisse, a Berkeley, California restaurant.
